Vegetarian spring rolls, also known as veggie spring rolls or vegetarian egg rolls, are a popular appetizer or snack in many Asian cuisines. They are typically made with a variety of vegetables, herbs, and sometimes tofu or other plant-based proteins, wrapped in a thin pastry wrapper and deep-fried until crispy.

Here's a basic recipe for vegetarian spring rolls:

Ingredients:

  • Spring roll wrappers (made from wheat flour or rice paper)
  • Assorted vegetables (such as shredded cabbage, carrots, bell peppers, bean sprouts, mushrooms, and onions)
  • Tofu or other plant-based protein (optional), sliced into thin strips
  • Garlic, minced
  • Ginger, minced
  • Soy sauce or tamari
  • Sesame oil
  • Salt and pepper, to taste
  • Oil for frying

Instructions:

  1. In a large skillet or wok, heat some oil over medium heat. Add minced garlic and ginger and sauté for a minute until fragrant.
  2. Add the vegetables and tofu (if using) to the skillet and stir-fry for a few minutes until they are slightly softened but still crisp. Season with soy sauce or tamari, sesame oil, salt, and pepper to taste. Remove from heat and let the filling cool.
  3. Take a spring roll wrapper and place it on a clean surface or cutting board. Place a spoonful of the vegetable filling in the center of the wrapper, leaving some space at the edges.
  4. Fold the bottom edge of the wrapper over the filling and roll it up tightly. Fold in the sides of the wrapper and continue rolling until you reach the top edge. Dab some water on the top edge to seal the spring roll.
  5. Repeat the process with the remaining wrappers and filling until all the spring rolls are assembled.
  6. In a deep frying pan or pot, heat oil for deep-frying. Once the oil is hot, carefully place the spring rolls into the oil, a few at a time, and fry until they turn golden brown and crispy. Use a slotted spoon or tongs to remove the spring rolls from the oil and drain them on a paper towel-lined plate.
  7. Serve the vegetarian spring rolls hot with your choice of dipping sauce.

Please note that this is a basic recipe, and you can customize the filling by adding or substituting different vegetables, herbs, or plant-based proteins according to your preferences. You can also choose to bake the spring rolls instead of deep-frying them for a healthier alternative.

Additionally, if you prefer a gluten-free option, you can use rice paper wrappers instead of wheat-based spring roll wrappers.
