- 20 ml Lychee syrup
- 50 ml pineapple juice
- 70 ml passion fruit juice

- Garnish : raspberries
- Add the ingredients to a shaker
- Ice up 2/3 of the shaker with cubed ice
- Shake vigorously for 7 to 10 seconds

Clover Club
Cocktail created before Prohibition in Philadelphia, at the gentlemen club of the Stratford-Bellevue hotel.

Ingredients
- 30 ml Gin
- 30 ml Dry vermouth
- 30 ml lemon juice
- 20 ml Raspberry syrup
- 15 ml egg white
Difficulty level : ***
- Glass : cocktail
- Method : shake
- Ice : –
- Garnish : raspberries
- Add the ingredients to a shaker
- Shake vigorously without ice first for 15 seconds
- Ice up 2/3 of the shaker with cubed ice
- Shake vigorously again for 7 to 10 seconds
- Strain into a chilled glass with no ice
- Garnish and serve
Use the “dry shake” technique to get a nice foam and the typical silky mouthfeel of cocktails made with egg whites.

- 10 ml Raspberry syrup
- 30 ml strawberry juice
- 10 ml lime juice
